Cooking for one doesn't have to be a chore. Here are some simple, quick, and tasty recipes for single servings:

1. Microwave Omelette

Ingredients:

  • 2 eggs
  • Salt and pepper to taste
  • A splash of milk (optional)
  • Desired fillings: diced vegetables, cheese, herbs, etc.

Instructions:

  1. Whisk eggs, milk (if using), salt, and pepper in a microwave-safe mug or bowl.
  2. Stir in your chosen fillings.
  3. Microwave on high for 1-2 minutes. Check the consistency and microwave in 30-second increments until fully cooked.

2. Single-Serve Pasta

Ingredients:

  • 1 cup of your favorite pasta
  • 2 tablespoons of pasta sauce (e.g., marinara, Alfredo)
  • 2 tablespoons of grated cheese (optional)
  • Fresh basil or other herbs (optional)

Instructions:

  1. Cook pasta according to package directions and drain.
  2. Mix pasta sauce and cheese (if using) with hot pasta.
  3. Garnish with herbs and enjoy!

3. Quick Veggie Stir-Fry

Ingredients:

  • 1 cup of mixed vegetables (bell peppers, broccoli, snap peas, carrots, etc.)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of olive oil or sesame oil
  • Protein choice: tofu cubes, cooked chicken slices, or shrimp (optional)

Instructions:

  1. Heat oil in a skillet over medium heat.
  2. Add vegetables and sauté until slightly tender.
  3. Add protein choice (if using) and cook until heated through.
  4. Pour soy sauce over the mixture and stir well.
  5. Serve immediately, perhaps over a small serving of cooked rice or noodles.

4. Avocado Toast

Ingredients:

  • 1 slice of bread
  • ½ ripe avocado
  • Salt and pepper to taste
  • Optional toppings: cherry tomatoes, radish slices, red chili flakes, feta cheese, etc.

Instructions:

  1. Toast bread to desired crispness.
  2. Mash avocado on the toasted bread.

5. Microwave Chocolate Mug Cake

Ingredients:

  • 4 tablespoons all-purpose flour
  • 4 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • A pinch of baking powder
  • A pinch of salt
  • 3 tablespoons milk
  • 2 tablespoons melted butter or vegetable oil
  • 1/4 teaspoon vanilla extract

Instructions:

  1. In a microwave-safe mug, whisk together the dry ingredients.
  2. Add the milk, butter or oil, and vanilla to the mug and mix until smooth.
